For all those people who JUST LOVED my Tangy Lemon Muffins, here is the recipe so you never run short at home :)
The Flying Muffin Tangy Lemon Muffins
· 2 cups SR Flour
· ¾ cup castor sugar
· 75 grams melted butter
· 1 cup milk
· 1 egg
· Grated rind of 2 lemons
· ¼ cup fresh lemon juice
· ¼ cup sugar
· Sift flour and sugar into bowl
· Whisk together melted butter, milk , egg and lemon rind
· Add the liquid to the dry ingredients and mix no more than 8 times.
· Spray muffin pan with non-stick cooking spray.
· Divide mix evenly between about 8 muffin holes
· Bake at 200 deg c for approx 18-20 minutes
· Once removed from oven, combine lemon juice and sugar. DO NOT dissolve sugar.
· Brush syrup over hot muffins.
· Cool slightly and enjoy while warm
